Bacon wrapped dates September 15, 2011

 Found these pics at the most random moment, so thought of sharing before I forget again. This summer gave  me only a handful good mornings and even fewer good breakfasts…this one Friday was a special (thanks to Jamie @ work). So made this with her tricks and then doctored up some garnishes.

Slit your Medjool dates (were too starchy, try something smaller if you can) and depit keeping them one piece, slab some cheese in it and almonds (walnuts work too, but I prefer mine with almonds or cashews). Cut your bacon or buy reduced fat ones (if you use thick cut, full fat ones, they become too greasy and heavy…you dont want ONE piece of hors d’oeuvre to kill your appetite). Wrap the dates, pin with toothpicks and bake for 20 min on a greased sheet. At the turn of 15 min, open oven and garnish with almonds.  Toast for another 5 min.
