Chocolate Ganache November 9, 2013

The easiest, creamiest, fastest and not-very-sweet chocolate ganache ever. So bring on your cakes and cheesecakes and fruits and pretzels, I will have a yummy dip ready in about 10 minutes!

I used:

3 tablespoons dark corn syrup

2/3 cup heavy whipping cream

1-1/3 cup dark chocolate chips

Heat syrup and milk and bring to simmer, add the chocolate chips constantly stirring until smooth. Cool. Pour on cake or hold overnight for a stiffer ganache that you can spoon on your yummies.

Next time around, I will replace the corn syrup with maple syrup and add some (cooked, chopped and drained) applewood smoked bacon to the ganache for a deeper more breakfasty, more fall-ish flavor.
