Cranberry Chilli Caramel Cookies January 9, 2011

1 cup butter + 1 cup dark brown sugar-blended

1/2 cup chocolate chips, melted, blended

1 cup all-purpose flour added to the above

1 tbsp red chilli powder + 1 tsp ginger powder well mixed (you dont want a fish eye of heat when you chew your cookies)

3/4 cup Craisins (dried cranberries)

Oven heated to 375F, 1 tsp of batter goes on ungreased cookie sheet

each piece of caramel goes inside each dollop of batter such that it DOES NOT touch the bottom of the sheet NOR remains uncovered.

Bake for 7 min.

Let cool for few min, scoop with spatula, cook w/ bake exposed.

Enjoy the spicy and sweet crispness of the cookie and the tart chewey cranberries 🙂
