Copycat & 1-pan version of the classic Olive Garden recipe … my favorite thing on their menu from my grad school days

2-3 servings

1 spicy chicken sausage from Trader Joe -diced
1 slice of Applewood smoked bacon- diced
One medium potato baked or boiled- diced with the skin on
Three quarters of a small onion- diced
1 tablespoon diced garlic
Half cup heavy cream
Chicken broth 2-3 cups (I used Trader Joe’s low-sodium)
Half cup sweetcorn (I used frozen)

Salt and freshly ground pepper
to taste

Add bacon to a hot, heavy bottomed skillet (with little to no oil) and cook until they’re starting to puff up and render fat
Add sausage, stir until they start to cook and become fragrant
Add garlic and let it turn golden and fragrant (few seconds)
Add onions, cook until translucent
Add the diced potatoes, cook until the edges are slightly  crispy in the bacon fat
Add the chicken broth until all the elements are covered plus another half-inch
Add sweet corn
Bring to boil

Add cream
Bring down to simmer
Add salt and freshly ground pepper to taste
